Early in February, I catered a luncheon for a local law office in Whippany, NJ. I love doing corporate luncheons because most corporate employees get stuck eating the same boring local deli sandwiches over and over at corporate events like those. It’s really refreshing to be able to deliver them something they can get excited about and add my own unique twist on classic lunch staples to give them a change of pace.

For this event, the managers chose the combo platters filled with assorted wraps and sandwiches. Then we had a mixed baby green salad on the side with mesculan lettuce, tomato, onion, walnuts, chopped apples, crumbled blu cheese, dried cranberries, and balsamic dressing. It’s one of my signature salads and always a crowd pleaser. Then for dessert we served a beautiful organic berry medley fruit salad. It’s great to have the option to serve my clients decadent, rich Italian specialties, but also lighter health conscious options as well. That’s one of the bonuses of being your own boss and having such diverse menu options.
